I discovered I had a whole packet of mini chocolate chips, and didn’t know what to do with them. So I decided to make my vanilla cupcakes and added in the mini chocolate chips for an extra treat. Topped with delicious simple chocolate buttercream. Such a lovely combination!
So Easter Sunday is tomorrow, and I really wanted to make something cute…
One of the major cupcake trends are: red velvet cupcakes. Personally, I don’t even know what is so great about them, and I completely understand why Florian (Cupcakes Wars!) is so tired of them. I’ve tried a couple of red velvet cupcakes, and the ones that I ate were just plain cupcakes with cream cheese frosting. I don’t even understand what they are supposed to taste like. Are they a red coloured chocolate or plain cupcake? What is texture supposed to be like anyways? Obviously ‘velvety’, but I’ve read that it means ‘dry and crumbly’ and I’ve also seen ‘moist and buttery’.
So I decided to have my own twist on the popular red velvet cupcakes:

I love baking cupcakes a lot; my classmates should know that, I bake cupcakes and give them some so often! However, I feel bad if I bake a dozen cupcakes and not everyone gets a bit of it. Yet, I don’t want to use too much ingredients. So I made mini cupcakes, and they’re perfect! Just one of these is satisfactory. The vanilla cupcake is delicate and fluffy, and the mocha frosting is packed with flavour!
